3rd of July...Prepping the Pig

Starting with a couple of humble racks of rib and a some seasoning... A little "Slap Ya Mama" and Walkerswood Jerk Seasoning...The first rack gets "slapped"...while the other gets jerked.









Tomorrow morning, they have a date with the smoker!
